Suggestions for a quick picnic lunch?

I have 55 minutes to assemble a vegetarian picnic lunch for someone who isn’t a big fan of cheese. Suggestions?

Include hummus and whole wheat pita bread. I make a lunch on just that pretty frequently.

Fruit, of course.

Hummus, guacamole, spinach dip, crackers, bread, chips, fruit, popcorn, nuts, yogurt, candy, water, juice.

Do you have tomatoes and your favorite spices? Good. Let’s begin. Slice the tomatoes. Sprinkle the spices on top. If you’re feeling adventurous, put a little olive oil preferably flavored, but we’re not picky or vinaigrette on top and voila! Instant delicious!

Roasted peppers, asparagus, hummus and pita bread with an olive tapenade. And hot apple cider with cinnamon.

Raw veggies: carrot sticks, cucumber, strips of bell pepper, celery, spring onions (I think those are called scallions in the US?), radishes, cherry tomatoes. And some dips to dip them into. Breadsticks too.

Oh man…everyone has already shared the best of the best, minus no cheese.

I can’t wrap my mind around living without cheese, but, each to his own. lol

French bread with a spicey jalapeno/artichoke dip ( in most deli sections ) and/or french bread with olive oil & balsamic vinegar is awesome too!

Grapes, strawberries, apple slices with caramel dip, or a veggie pasta salad would all be great as well.

Olives are a must as well!

And then there is the wine….gotta have wine! ;-)

(I like brussels sprouts too, but not for a picnic).

Oh, cuke slices with strong cider vinegar. And salt. Mmmm… I’ve had that as a meal more than once, too.

Mmm.yes, marinated cukes, tomatoes and black olives in a red wine or other vinagarette dressing. To die for!

Guys. I’m an idiot.

I have promised this picnic lunch, and boyfriend is clearly delighted and looking forward to it. I am about to head to the store to pick up your excellent suggestions and meet boyfriend at work. Can’t find my keys. Scratch my head.

And then I remember that I loaned my car to a friend. Fuck me.

For your NEXT picnic, then: Cucumber sticks with peanut sauce. You can make it out of peanut butter, a bit of olive oil to thin, a dash of hot sauce. I add a little milk or coconut milk to mine as well.

This will be tricky to pull off, but I’ll bet you can do it.

Call the boyfriend and tell him that the ‘actual’ picnic is off, for the reason you mentioned. But tell him to stay by the phone—and get some privacy—because you’re going to have a virtual picnic with him instead. Invent how you can do that, and throw caution to the winds.

Then make that worth his while.

We went to the grocery store together and had a picnic in my living room :)

Thanks, all. Great suggestions. (And, in case you were wondering: bread with baby tomatoes, hummus, and basil; bread with peanut butter and banana; greek yogurt with blueberries and raspberries; sparkling white wine.)
