Does anyone have a good recipe for turkey pot pie?

I have cooked Thanksgiving turkey in the freezer. I’m off for two weeks, so I want to do some “real” cooking.

Here is @MissAusten’s recipe:

I like to make a turkey pot pie. Put a pie crust in a deep 9 inch pie dish and bake it at 450 degrees for about 8 minutes, or until it is nice and brown. Meanwhile, melt a couple of tablespoons of butter in a big skillet over medium heat, then saute about a cup to a cup and a half of frozen mixed veggies until they are thawed out (a few minutes). Add about two and a half cups of chopped up leftover turkey and cook for another minute. Sprinkle three tablespoons of flour over the meat and veggies and stir until the flour is absorbed. Then, stir in two cups of turkey broth (I make a big pot of it from the turkey carcass and freeze most of it). Season to taste with salt, pepper, and whatever herbs you like. Marjoram and sage are nice! Bring to a boil, stirring constantly, until thickened. Pour into pie dish, cover with top crust, seal and crimp edges. Bake at 350 degrees for 25 to 30 minutes or until crust is browned.

“Chop the turkey, mix with any leftover veggies and/or a bag of mixed vegetables, leftover stuffing, gravy put into a pie crust and top the crust with leftover mashed potatoes. Bake at 350 for 45–50 minutes. Top with grated cheese and put back in oven until cheese has melted.

This is the best….

* 2 Tablespoons oil
* 1 large onion, chopped
* 1 Tablespoon minced fresh garlic
* 1 Tablespoon minced fresh ginger
* 2 Tablespoon (or more ) curry powder (I like Madras curry powder)
* 1 Tablespoon flour (I use bob’s red mill gluten-free flour mix)
* 2 large carrots scrubbed, halved lengthwise and cut in to one inch pieces
* 1 cup peeled and diced potatoes
* 1 granny smith apple cored and cup in to one inch cubes
* 3 cups home-made turkey or chicken stock
* 1 cinnamon stick
* ½ cup golden raisins (I hate raisins)
* ½ cup peas
* 1 tomato diced
* ¼ cup chopped flat leaf parsley
* 2 cups shredded turkey meat
* salt and pepper
* ½ pound puff pastry (thawed if frozen)
* 1 large egg
* 1 Tablespoon water

1. Heat the oil in a large skillet and saute the onions for 8–10 minutes.
2. Add the garlic and ginger and cook for 2–3 minutes.
3. Add the curry powder and flour and stir for one minute.
4. Add the carrots, potato, apple,Turkey broth and cinnamon stick. Bring to a boil then reduce the heat and simmer partially covered for 20 minutes.
5. Add the raisins, peas, tomato, parsley and turkey and cook for 5 minutes more. Season to taste.
6. At this point you can cool the stew and refrigerate it for a day or two or you can continue right away.
7. Preheat the oven to 350 degrees.
8. Pour the stew in to a two-quart oven proof casserole dish.
9. Gently roll out the thawed puff pastry until it is large enough to cover the casserole.
10. Trim the edges of the puff pastry off and cut several vents in the top of the pie.
11. Whisk the egg with one Tablespoon of water and brush the top of the pie with in.
12. Bake the pie 40–45 minutes ant 350 degrees. The top of the pastry should turn golden and puff up.
13. Serve with cranberry chutney or relish.

I make an easy kind if ‘cheater’ pot pie, but it is very delicious!

Buy the ready made pie crusts, 2 of them. One for the bottom crust and one for the top.

Mix your diced Turkey/Chicken meat with proportionate amounts of par boiled, diced, baby carrots, potatoes and defrosted frozen peas.

Mix meat & veggies with pre-made Turkey gravy, canned or packaged and add salt, pepper and a dash of parsely & poultry seasonings.

Spoon mixture into pie shell, cover with top crust, crimp edges and make a decorative ventilating design on top. lol

Bake at about 350 for 40–45 minutes.

Mmm good!

I can’t believe a goose is giving me tips on turkey pot pie!

Chop up turkey and put it in a deep dish frozen crust. Add some frozen mixed veggies and leftover gravy or half diluted canned cream of chicken soup. Use another frozen crust to put on top, press the edges and bake until it’s brown.

Heh..well, I could love a Turkey too. Just never had the opportunity., Oh wait…yes I have and I divorced him. lol

The result…I took my frozen left over Thanksgiving turkey ,cut it up, mixed it in with creme of mushroom soup AND a can of cream of onion soup. I dumped in a bag of mixed veggies which didn’t have potato or onions in it. I cut up a large potato and boiled it for just a few minutes, because I figured he frozen veggies were already cooked. I also bought some pearl onions, peeled them and cut them in half and threw them in too. I “made” pie crust (ALRIGHT! I bought pre-made crust at!!) and made about 8 individual servings in small loaf pans and froze them. It was a couple of days before I had one, at which point I’d forgotten what all I had put in them. The first bite was…WOW! It was REALLY good, like no pot pie I’d ever tasted before. At which point I walked back in my mind to remember what I put in there. It was the creme of onion soup that really made the difference I think.
