How does capon taste compared to chicken?

I just found a recipe for roasted capon and was wondering how much different it could taste compared to chicken. Could I replace it with a chicken, or would that completely change the dish?

I no longer cook fowl, but a capon is an emasculated rooster and, if raised nicely, will be larger, plumper and more succulent than your standard supermarket chicken.

A Capon is a chicken, and will still taste like chicken. Maybe a little bit more fat, but still chicken.

What @gailcalled said. We carry them fresh at the farm. If you can’t find one, a regular old chicken will substitute.

A capon is a castrated rooster. Capons are considered by many people to be a and old fashioned sort of food, and they tend to have more tender, flavorful flesh as well as a higher fat content. The markedly different flavor profile of a capon is distinctive to consumers once they taste it, especially when the capon has been conscientiously raised.
