What is your recipe for great french fries?

I am not looking for healthy recipes, just the opposite, a recipe that will consistently result in great french fries similar to McDonald’s. I rarely eat at McDonald’s, but when I do, I love their french fries. I have looked some on Google and tried some ideas to no avail.
My fries tend to come out either soggy or crisp and mealy; whether I partially cook them, freeze them and cook them again in my deep fryer they are OK.
It has to be about the potato; moisture content of the potato; the type of potato; the cooking method and oil used to create the ultimate fry.
So, if someone knows the secret great recipe that they are reluctant to share since it is so valuable-go ahead anyways. I have tried plenty of good to great french fries; but to me, McDonald’s, I am sorry to say still rules.

If your not allergic the best oil to use when cooking fries is peanut oil though I know that McDonalds uses vegetable shortenting

@jaytkay- I knew it was the PME, lol. Wow, that was great article, thanks.
@creative1-your right, peanut oil is good, and even coconut oil is awesome for frying. But lets get nasty, and do what McDonald’s did originally-cook in beef tallow.
Good organic grass fed beef tallow can’t be beat for flavor and nutrition, so maybe we are up to something here.

Fry once at a lower temp. Then re fry right before serving. That’s how good restaurants do it.

@Garebo Yes I do remember when they were cooking in the beef fat I worked there as a teen and remember it well lol

Everyone above is correct. Great FF should be cooked twice. The first time at about 275 degrees, to Blanch them and make the inside moist and fluffy, and the second time at 350 degrees to get that nice cripy outside. They type of fat is a personal preferance. @creative1 saying Penut oil is really one of the best ones. Beef lard (tallow) is a great on too, but over the past few years I have fried them in Duck Fat and they have become my favorite.

@sonatking05: sounds like the ticket, I just don’t know where I am going to get duck fat this time of night.

now i want fries! the only time i ever make them (and it’s very rare for me to do so) is if i buy a bag of frozen ones. then I bake them. I don’t fry things at home, I am paranoid about fires.

I’m not sure what fry cooker it is but it came with a potato cutter (you put a potato in and you push the handle down and it slides the potato into a bladed grate and cuts it into perfectly square fries) then me and my friend turn the cooker to 350 and let the fries cook in the oil (not sure which…peanut sounds right) for about 10–15 mins and pour sea salt on them…apply ketchup and feast!! BWAHAHA

I’m equipped with such a contraption, the only drawback is the darn thing is too small. With mine I usually have to filet down the spud to fit. I do have one of those fry babys, works great.
Another question, which I didn’t find the answer too in the previous article, is what kind of spud works the best?

Ummm…I know nothing about potatos V_v it’s all at my friends house but he buys a huge sack of them and every time I go over we make about 4 potatos worth of fries and elk steak (his dads a hunter and he has too much steak so he’s always wanting me to eat alot XD it’s pretty sweet) but yeah sometimes we cut the potatos in half but usually we are so hungry we just force the whole thing lol

I like having generous friends that have lots of elk steak. I like that as much as I like good french fries.
