What should I do with all this goat cheese?

Last night I made goat cheese and pesto pizza, and it was awesome. However, now I have a ton of leftover goat cheese, something I never ordinarily buy. What can I do with it? (Vegetarian suggestions only, please! Seafood is ok. But I have trouble picturing goat cheese + fish.)

Omelets and other egg dishes are great with goat cheese. I also put it on sandwiches. Use it like you would any cheese.

Greek salad is made with pieces of tomatoes, sliced cucumber, green bell peppers, red onion, sliced or cubed feta cheese, and kalamata olives, typically seasoned with salt and dried oregano, and dressed with olive oil. Fettuccine Casserole

Ingredients

* 1 lb. fettuccine or egg noodles
* ½ cube butter (or ¼ cup olive oil)
* 6–8 cloves of garlic, pressed
* 2 tablespoons chives
* 2 tablespoons dry or fresh parsley
* 1 cup goat milk, half-and-half, or cream
* 16 oz. Redwood Hill Farm Ch�vre
* ½ cup grated aged cheese, such as Redwood Hill Farm Cheddar, Shepherd’s Cheese,
* Pecorino or Parmesan
* Optional: saut�ed mushrooms and/or peas

Instructions

1. Cook noodles. While they cook, melt butter and add garlic, chives and parsley and saut� for two minutes.
2. Heat goat milk (or half-and-half or cream) in a sauce pan and stir in ch�vre until it is dissolved. Do not boil.
3. When hot, add the butter, chive and parsley mixture and then add drained noodles, optional ingredients and grated cheese.
4. Toss well land place in an oiled casserole.
5. Bake, covered, at 350 degrees for 45 minutes.
6. Uncover, top with extra grated cheese, and bake another 15–20 minutes until top is golden.

Stuff endive with it and put some fig preserves on it, with candied pecans. Makes an awesome appetizer.

It also freezes well, so don’t feel you have to use it all at once.

Goat cheese with honey is AMAZING! I was shocked at how delicious it is. Eat it with crackers.

@BarnacleBill: I had no idea you could freeze goat cheese! That’s awesome :)

Play with adding it to different salads with different vinegarettes, pair it with fruit, delicious bread or add it to an omelet with veggies.

lucky you to have all that goat cheese—easiest thing—I mash in a lot of fresh herbs, maybe roll it in cracked pepper and use it as a spread on crackers

My favorite salad recipe has goat cheese
Baby spinach, sliced granny smith apples, dried cranberries, toasted walnuts and crumbled goat cheese.
jServe with a Cabernet Vinaigrette.(olive oil, Cabernet, vinegar, salt and pepper)
Very very easy and a great flavor combination!

Freeze it in chunks small enough that you aren’t faced with the too-much-cheese dilemma again.

Then take your time and cook all the tempting recipes above.

Crumble it on a green salad or melt it on baguette rounds and serve with a salad with walnuts and a vinaigrette.

Mmmmm another vote for baked goat cheese with honey. Drooling a little thinking of it.

My friends and I had to get rid of a ton of sheep cheese once, so we made sandwiches with only sheep cheese, and thick with it, and put it on eggs and salads. It didn’t last too long!

I’d crumble it over layers of thin sliced multi-colored tomatoes that get backed in the oven until a think crunchy crisp or as a snack alongside fruits or rolled up in bits of salad greens (finger food).

@Dutchess_III: Heirloom tomatoes I think they’re called. Green, Yellow, Orange, Purple and Red ones. Some of them have spots and stripes. Yum yum coated with olive oil, cracked black pepper and layered between crumbles of cheese.
