What's a great book on food science?

I love to bake and I want to learn the science behind how baking works so I can really start to make my own recipes from something more than intuition.

Cookwise by Shirley Corriher is good, especailly about baking.

A cool show incorporating a lot of food science is Good Eats with Alton Brown. I bet you can find all of the baking related shows by doing a search. He goes overboard with the science behind things. It’s very cool.

If you’re really interested in food science on a deep level, try googling for molecular gastronomy.
