Does anyone have a good recipe for an olive and peperoncini salad?

Asked by Adirondackwannabe (36713points) October 13th, 2011

I just got tired of paying $5.99 to $6.99 a pound at the olive bar, so I picked up the basic ingredients for a lot less. Do you have any suggestions for some other things to add?

@Adirondackwannabe You really don’t need “Ingredients”

It comes in Jars for like $1.69 to @3.00 at any grocery store. It is called Giardinera.

But if you like olives specifically… Here is something good to do with them too

Get a cutting board and a mezzaluna (A moon shaped chopper with a handle for rocking back and forth.)

Lay out your; Olives, garlic, red peppers (jar) peperoncini, artichoke hearts (de-choked) mushrooms, Italian spice mix, or fresh basic, oregano and flat leaf parsley a few capers (If you like them?) and some of the Gardinaria and chop them all up together, scoop that into a bowl and add just a little bit of good balsamic vinegar and really good olive oil 3 to 1 ratio, (More oil)

and eat that on any sandwich you like… or on toasted crusty bread with parmasean curls or on crutons even

I call this the “Italian Trinity.” Roasted red peppers in a jar, Artichoke hearts, and button mushrooms.”

You can mix those with anything and make it an antipasto.

Cubes of good provolone cheese, cubes of mortadella, soprasatta or Spicey Ham called Cappricola… Anything you like really from a deli.

@GabrielsLamb Thanks, I’m not familiar with that brand but I’ll look to see if any of our stores carry it. The other ideas sound good as well, except for the capers.

@Adirondackwannabe You’re welcome honey… I’m like the queen of Italian food. Anything you need to know just ask.

I wasn’t sure if you meant the cold vegetable salad with the olives or the deli meat salad with oilves? Either way you’re covered here.
