Cookie, share with me your recipe for sweet & sour spare ribs?

Can you please share with me what you do with a slab of back ribs to transform them into sweet and sour spare ribs? Hold nothing back, most notably how you section them for the oven pot as opposed to barbequing them.

Seems there are two different versions (Asian and Southern US). I have always liked the recipes from Epicurious and they have one for sweet and sour spare ribs here.

Cut into pieces with three ribs each. Place in oven dish with at least two inch sides. Pour mixture of 50/50 vinegar and water to half way up the ribs. Set oven to 290. Cover and bake one hour. Turn the meat and bake another hour. Pour liquid out of pan and coat the ribs with either barbeque or sweet and sour sauce. Place in over 20 minutes uncovered.

Make sweet n sour sauce with vinegar, ketchup, and brown sugar.
