Any ideas for a good pasta recipe for these few ingredients?

Asked by cutiepi92 (2252points) July 3rd, 2013

My mom says I need to load up on carbs and eat plenty of pasta tonight (race tomorrow). We are out of bread. I’m a bit low on money and it’s raining so I don’t feel like going to the store lol. We don’t have much to cook with so I will list out what we have in our fridge. All doesn’t need to be used, but just to give some options aside from plain ole pasta and marinara:

Thin spaghetti noodles
Elbow Macaroni
Leftover marinara sauce (homemade)
milk
mozzarella cheese
cheddar cheese
broccoli
carrots
cucumber
onions
Assortment of herbs and spices
fried chicken (homemade)
cooked collard greens…....as you can see, we are from the South lol
soy sauce
sesame oil
chili oil
peanut butter
sesame seeds
tabasco
ketchup and mustard
steak sauce

That’s everything we have (that’s somewhat useful anyway). So does anyone have any ideas?

You can certainly use the spaghetti and leftover marinara sauce!

Here’s an idea: Slice very thin strips of the peeled carrots and cucumbers (I’d avoid the seedy part of the cuke). Cook the thin spaghetti (4–6 ounces) according to directions and when cooked al dente, drain the noodles and plunge them into a bowl of ice water so they can rapidly cool. Leave them there for about 30 seconds, then drain.

Stir together a tablespoon each of the soy sauce, chili oil and sesame oil (you might need more sesame oil). Coat your cold noodles with the sauces and mix in your strips of cukes and carrots. Sesame seeds and red pepper flakes (if you have them) would add some depth to this! You might want to adjust the sauce up or down for spiciness.

The cold noodle salad will be delicious!

I make a very easy pasta dish that I can’t get enough of. Cook the pasta (thin works best) and when it’s done, mix in one can of stewed tomatoes, a little basil, chopped black olives, and as much crumbled feta as you wish. A great dish hot or cold.

Dice some onion. You don’t mention garlic, but if you have that mince it. If not, sprinkle on some garlic powder. Cook the spaghetti or the elbow macaroni (either one, but not both). Stir the marinara sauce into the pasta, onions and garlic. Cover with slice of mozzarella cheese. Bake in a 350 degree oven for 20–30 min.

Serve with cooked broccoli on the side.

Mac & cheese with veggies mixed in. Well, probably not the cucumber, lol.

Cook the thin noodles or the elbow macaroni to al dente. Heat the chicken in the marinara sauce. Plate the noodles on a bake safe plate, top with the chicken, spoon on the marinara sauce. Then place cubes of mozzarella and or the cheddar on top and warm in the oven long enough to melt the cheese cubes.

Stir fry the broccoli, carrots and onion in the sesame oil and serve as a side dish.

Warm it all up and serve a “leftover buffet!”

you guys are great :) So I ended up doing two things. First, I made the cold noodle salad as suggested by @picante which was delicious! I did what you said, all I added was a spoonful of rice vinegar. I also did a mixture of what @WestRiverrat and @marinelife suggested. I did the diced onion and garlic, mixed in the marinara, diced fried chicken, and pasta. Then I topped with mozzarella and put it in the oven for about 20 minutes (covered).

Thanks for your suggestions!!!
