Do you stuff your turkey?

I have the yummiest stuffing that I put in the turkey and under the skin too. About 15 years ago my sister made a big deal out of how stuffing a turkey can cause salmonella poisoning and she refused to eat it. I don’t really see how it could develop salmonella unless it’s undercooked, so I still do it. We’ve never had an issue with any kind of food poisoning, at Thanksgiving or at any other time.

I usually pack my turkey with onions, and the ends of carrots and celery that other (normal) people put into stock. I’m lazy, and I buy stock, haha.

Then I cook the dressing separately, because turkey + oysters just sounds gross.

I like to try different kinds of more exotic turkey stuffings but I always go back to the most basic type (chestnuts, mushrooms, onions). But it’s gotta be moist.

Ew! No oysters!

Here is my recipie:

Saute onions, celery, port mushrooms and some garlic and RAISINS and walnuts together allllll day or for a long time. Which ever comes first. I make home made bread the day before (I use a dark lager for the liquid), cube it, then dry it out in a warm oven. When it’s time I mix the bread in with the saute and then seal it and let it sit in the fridge overnight, stuff the turkey the next day or whenever. No oysters.

Turkeys should definitely be stuffed. That gives you more food with which to stuff yourself. No oysters though – that sounds absolutely disgusting…...but, different strokes for different folks.

You just can’t compare to stuffing baked by itself, to stuffing that’s baked in a turkey, with all the juices trickling through it…ummmm!

I can’t believe no one has heard of oyster dressing before.

It’s pretty much the same as any other dressing, but with oysters. I usually make two batches – one with the oysters, and one with cranberries, so you have a sweet or a savory, as you like.

Here’s a recipe close-ish to mine. I’d use about half as much oyster, and vegetable broth to make up the rest of the moisture.

Double helping of the oyster dressing. Hell, just fill my plate with it, top with a dob of smashed potatoes and gravy the lot.

No. I’ve never known anyone who has eaten oyster stuffing, until now. Not even in the cartoons.

But it did prompt me to ask a questions about oysters just now. :)

Really? The only oysters I’ve ever had are the tinned ones. I eat them on saltines. Those are yummy. In fact, I must have some soon, since my sherbet is all gone.

Ok, the ONLY time I eat tinned oysters is in dressing.

The one positive aspect of living in Florida is fresh-from-the-water shucked oysters. Which of course are eaten raw on crackers with lemon and horseradish.

I prefer the fresh in dressing. I LOVE scalloped oysters. How can you go wrong with fresh oysters, saltine crackers, real cream and butter???

I don’t. I make my dressing on the side. I think it dries out the bird, and it can cause problems with leftovers unless it is really well cleaned out..

I prefer the canned (that’s Midwestern South for tinned) on saltines. Maybe a dab of mustard.

I always take all meat off the bird before I store it / freeze it.

No. Never. First of all, I like my stuffing on the dry side. Secondly, I am paranoid of food poisoning. I actually know someone who got food poisoning on thanksgiving. The whole family got it that night.

Having said that, if you love the stuffing in the turkey, you can always microwave it after you pulling it out as a safety measure. Anyone who is paranoid can nuke their own before they eat it.

You can make the stuffing with the turkey juices on the side once some of the juices have started dripping, it doesn’t need to be made inside the turkey to use the turkey juices.

@Dutchess_III Yeah, doesn’t taste or feel the same. Just cook your turkey properly, folks. Use a thermometer. :)

I don’t put my stuffing in a turkey, because I don’t eat meat, and then wouldn’t eat the stuffing. You can’t get enough stuffing IN the bird, anyway. Make a big batch and you can bake some and stuff some.

I’ve only made home made stuffing once, and it was perfect. I’m done. Not going to push my luck!

@ibstubro Technically, I think that if you’re not putting it into a bird, it’s not stuffing… it’s just stuff. ;)

@Dutchess_III I didn’t even like stuffing until my 30’s, so I’m not really the person to listen to regarding the stuff. That last stuff is for you @glacial.

I use half the fat it calls for, and I often do it vegetarian, just depends who else is eating it. I add cashews to mine.

Nope. We cajun deep fry our turkey :-D
We make “dressing” which is kinda like stuffing, it’s made of the same stuff, but just not stuffed in the bird.

@Dutchess_III If you like canned oysters, you’ll like oyster dressing. It’s rich and delicious. Almost as good as scalloped oysters!
