Why does the end piece taste better?

For rib eye steaks.

It’s fatty and more tender with a higher concentration of salt?

I love the ends of roasts. I think it because they have more crust on them.

Salt! And, possibly more marinade if it was put in a marinade before cooking.

Personally, I prefer the center pieces.
