Make sure to have Espresso coffee and Italian pastries for dessert.

And Anisette for the Espresso.

Spaghetti….? Lasagna?

Lasagna. Spaghetti. Or, the good ‘ole Delivered Pizza.

I’d second lasagna, because it’s all prepared in advance, thus allowing you to enjoy your guests.

I also like lasagna. But what about those fabulous bean (fava I think) that are uniquely Italian. You can cook them ahead and serve in a salad when it is hot (very hot here in Seattle this week).

Personally, I am a sucker for Saltimboca made with chicken breast instead of veal. This recipe is basically exactly the same one I use. We serve it with a tossed salad, and if everyone coming to eat it is not concerned about weight, with a portion of Fettucini Alfredo

And personally I like having either raspberry cream soda, , fresh berries with balsamic vinegar , or a store-bought Tiramisu for dessert.

You can’t go wrong with veal scallopini. Never fails to impress. Suits most tastes!

Make sure you have a bottle of wine. Maybe Chianti. And bread sticks.

What kind of cooking skill level and equipment do you have? Are there any dietary restrictions?

Pasta in a homemade sauce is the classic Italian meal. (Never, never, never pasta sauce out of the jar—unless you or your mother was the one who put it in that jar in the first place.) Homemade ravioli also work well—they’re surprisingly easy, if you have the right equipment. Chicken parmesan is also fairly easy.

This chicken marsala recipe never fails. It tastes and looks AMAZING! It has 252 good reviews on the food network. Really. Plus, it’s super-easy.
