What do you put in your quiche?

I’ve recently begun eating a store bought quiche, and I don’t like the onions so much, so I’m going to start preparing my own.

What are some good recipes for a delicious breakfast quiche.

I like bacon, hashbrowns, sausage and a little syrup.. and yes.. I do mean in a quiche.

Spinach. Mushroom. Bacon. Cheese. Chunks of potato.

I put in different things, according to whim & available leftovers. Right now I have some in the freezer; one with spinach & scallions, and one w/diced Canadian bacon & broccoli. I usually put in some cottage cheese & shredded Cheddar in addition to veggies. Leftover mushrooms are also very good in it.

My quiche has sausage, cheese, some of the above vegs., & I pour a tiny bit of jalapeno juice in it. It spices it up.

My mum’s quiche (well, probably not breakfast food) is spinach, sharp cheddar, cottage cheese, onions, and stuff like that. I can send you the recipie if you want.

Alton Brown calls quiche refrigerator pie. You can put almost anything in it. Here’s the video.

I like spinach and onions. Then again, I also like ham, sausage, bacon, and a host of other things. The best part about quiche is that you can do whatever you want to with them and they generally turn out fine.

My advice would be to try green onions or less onions, but don’t leave onions out completely. Experiment, but in my experience, forgetting them or leaving them out doesn’t work well.

My favorite is Quiche Lorraine, which has bacon, onion and Gruyere cheese with a touch of nutmeg. However, I also like to make quiche with:

Boiled potatoes and onions (a Spanish tortilla)

Broccoli and cheddar cheese

Spinach and cheddar cheese or Swiss cheese

Asparagus, green onion and either Swiss or cheddar cheese

Breakfast sausage, hash browns and cheddar cheese

Mushrooms, any type od cheese and green onions

Italian sausage, mozzarella, Parmesan and/or Ricotta cheese

Ham and cheddar cheese

Ham, asparagus and Swiss cheese

Green chilies, cheddar cheese and/or Monterrey Jack cheese, with salsa on the side

Leeks, Romano cheese, and Swiss cheese

Bacon, shrimp, salmon or crab meat, and Swiss cheese, sometimes with potatoes or with sour cream or green onion or red bell pepper

Leftover ratatouille and Swiss cheese

Tomato Basil quiche, sometimes with oil-packed sun-dried tomatoes instead of fresh

Smoked salmon with Swiss cheese, maybe some Spinach or potatoes, and topped with sour cream and caviar

In other words, I like quiche. Sometimes I make it as a frittata instead, which simply means I don’t bother with a crust, but instead make it in my grandmother’s cast iron skillet.

Building off of @Darwin‘s response, you can skip the crust simply by tossing the cheese in a spoonful or two of flour so that it doesn’t stick and then sprinkle over the baking dish before pouring in the egg mixture. Then, add anything – I like caramelized onions, gruyere or a shar chedder and tomatoes.

Hey thanks everyone! I’ll probably start out basic, and move my way up to adding all the extras once I’m comfortable baking them.

sautéd <sp> leeks & diced tomatos

But as others have said anything you have laying around (oddly) seems to work well.
