A frittata is a great egg-based dish, and also good for using up leftovers.

The only “special” equipment you need is an oven-proof skillet.

Preheat the broiler in the oven. Take 8 eggs and whisk them in a bowl with about ¼ cup milk. Stir in about ⅓ cup of whatever shredded or grated cheese you happen to have on hand. Add salt and pepper to taste. Saute over medium heat any mixture of ingredients, with a bit of butter or oil:
diced onion and ham
diced cooked potatoes, green peppers, bacon
cooked Italian sausage, pasta
anything else that sounds good and you happen to have in the fridge

Once those ingredients are hot, pour in the eggs and reduce the heat to medium-low. You can use a spatula to gently move the ingredients around so they are evenly spread, but after that don’t stir. Let it cook for about five minutes, or until the edges look set and the bottom is cooked.

Take the skillet off the stove and pop it into the oven, under the broiler. Keep an eye on it, and remove it when the eggs are fully cooked and the frittata is a nice golden brown. Loosen the edges with a spatula and the whole thing should slide right out and onto a serving platter. Cut into wedges and serve with a salad and some good bread.

If you want an extra fluffy frittata, separate the egg yolks from the egg whites. Whisk the yolks with the milk in a large bowl, and in another bowl beat the egg whites until stiff. Gently fold the whites into the yolk mixture and continue cooking as described above.

Darn you @SuperMouse for saying it faster!! :P

Have you eaten Spaghetti Carbonara? I can give you how I make it, but I never measure…
Cook some bacon crispy, chop into bite size and set to the side
Separate some eggs, 4–8. Keep the yolks, toss the whites.
Olive Oil
Crushed fresh garlic, 1 toe
Heavy Cream
Butter
Fresh Parmesean, grated
Fresh chopped oregano
Spaghetti noodles – cooked

Get noodles started first set to the side in a colander
sautee garlic in oil, probably 2 – 4 Tablespoons of oil
add butter 2–4 Tbsp when garlic is tender and oil smells yummy
add cream, 1 cup, maybe a little more
stir in about 1 cup grated parmesean cheese
Add noodles, stir, add egg yolks, the heat from the sauce and noodles cooks them. Mix really well, add bacon and oregano.
Serve topped with more cheese.

@All,Thank you for your amazing contribution!. I can’t wait to try.
@Trillian Thanks!,but isn’t it a noodle based recipe?.

Trillian's avatar

Yeah, but eggs are the main ingredient in the sauce. Sorry, don’t try it if you think it isn’t what you wanted. I thought of it as soon as I saw the word eggs, but I could understand it if you had something else in mind.

@Trillian No no,it’s a nice recipe. Really. I want to try that sometime.

Poach two eggs in thick tomato sauce (homemade is excellent, but from a jar works quite well too), then serve each egg on a slice of toast, with the sauce poured over it. So tasty! The cookbook I got this from calls it Eggs in Purgatory – not sure where that name came from, but I love it!

bacon & eggs pizza
makes 4 servings
1 ready-to-use baked pizza crust (12 inch)
½ cup Real Bacon Bits
⅓ cup each chopped tomatoes, green onions and fresh mushrooms
1 cup Shredded Low-Moisture Part-Skim Mozzarella Cheese
4 eggs
¼ cup water

HEAT oven to 375°F.

PLACE pizza crust on foil-covered baking sheet; top with bacon, tomatoes, vegetables and cheese.

BEAT eggs and water with whisk until well blended; carefully pour over crust.

BAKE 15 to 20 min. or until eggs are set and crust is lightly browned.

SPECIAL EXTRA For extra zip, add 1 Tbsp. yellow mustard to the beaten eggs before pouring over crust.

Chili Eggs

This is very rich and will stretch to feed quite a few people, along with a salad or for a brunch. Or leftovers are really good the next day – they microwave nicely.

½ c flour
1 tsp baking powder
½ tsp salt
10 beaten eggs
1 tbsp melted butter
1 pint small curd cottage cheese
1 lb (I’m not kidding) grated sharp cheddar
2 small cans of diced green chilis, Ortega for example.
Mix the dry stuff, then add all the wet stuff. Stir till evenly mixed. Put into a deep
souffle dish and cook at 350 degrees about 70 minutes or until puffy, or (better, I think)
in a big flat pan the size of a double brownie pan and cook about 30 minutes. Cut into squares.
Extremely delicious.

I like devilled eggs. Hard boil ‘em. Slice in half. Take out the yolks and mix in miracle whip, yellow mustard, (salt & pepper); spoon mixture back into the white halves and sprinkle a lil paprika.

@raool (side note: love your handle)
NOOOOOOOO! Not Miracle Whip!!! Real mayo!!!
Otherwise, fabulous.
