I like to fiddle around with regular pancake mix, by doing two things: 1, using good buttermilk instead of milk or water, and 2. adjusting the consistency, since it tends to be thicker with buttermilk, by adding melted butter. Very rich, fattening, moist, tasty, easy.

here’s a simple one:

2 eggs
2 cups of flour
2 cups of milk (you can add some more later if it’s too thick)
1tspn sugar
1tspn soda
1tspn vanilla

mix thoroughly until smooth

a drop of oil in a frying pan, only medium heat (the most common mistake is people turning it to max and burning everything). a couple of minutes on one side until the top is no longer liquid, then flip.

serve with sugar, honey, maple syrup, jam, or chocolate :)

From The Joy of Cooking:

Melt 3 Tblsp. of butter. Set aside to cool a bit.

1½ c. AP flour
3 Tblsp. sugar
1¾ tsp. baking powder
½ tsp. salt
I also add about 2 tsp. cinnamon
Whisk all of that together and set aside.

Measure 1¼ to 1½ cups of milk. Mix in 1 tsp. vanilla, the melted butter and 1 egg into the milk. (I do all of this in a liquid measuring cup. Saves on washing a mixing bowl.)

Pour this into the dry ingredients – pour and whisk at the same time. Continue to whisk just until the ingredients are mixed. Do not overmix.

Bisquick…the one where you put the water in it and shake it!! ;-) Okay Im lazy but they come out perfect!!! As far as syrup…I HATE maple, so I’ll take some fresh fruit and cook it with a little sugar and water and wait for it to thicken. Apples work great. So do peaches and strawberries!

@tedibear39 I use almost the exact recipe. Mine calls for ¼ tsp nutmeg in with the dry ingredients and two eggs instead of one. The other ingredients and the mixing method are the same. Always turns out great!

If you like apples and cinnamon, try this: Make pancake batter according to whatever recipe you decide to try. Peel and core a granny smith apple, then slice it so you end up with ¼ inch-thick apple rings. Heat your greased pancake griddle on medium heat. Put an apple slice on the griddle, and pour just enough pancake batter over it to cover the apple. When the top of the pancake bubbles and the edges look set, flip it. I keep pancakes warm in the oven on the lowest setting while I finish cooking the rest of the batter. The apple slices cook perfectly along with the pancakes.

Top the apple pancakes with cinnamon syrup. In a small saucepan, stir together ½ cup granulated sugar, ½ cup brown sugar, and ½ tsp ground cinnamon. Stir in 1 cup water and bring to a boil over high heat. Boil, stirring occasionally, until the syrup thickens, about 10 minutes. Keep in mind that it will thicken a bit more as it cools, and if you boil it for too long the syrup will turn gloppy. Still tastes good, but doesn’t look as nice. Anyway, remove it from the heat when it’s thick enough and stir in 1 tbsp butter and ½ tsp vanilla extract. Pour over pancakes. Die and go to heaven.

You can also make raspberry syrup with just a bit more effort. Mix 1 cup sugar and one cup water in a saucepan and bring to a boil. In a small bowl, mix 3 tbsp cold water with 1 tbsp cornstarch until smooth. Whisk it into the boiling sugar water, then stir in one 12 ounce bag of frozen raspberries. Bring back to a boil and stir well. Continue boiling until berries have broken down and syrup is thickened, about two or three minutes. Strain it through a fine mesh strainer, mushing down with the back of a spoon to remove some of the extra pulp and seeds. Delicious, and you can use it on other things besides pancakes. Vanilla ice cream, pound cake, oatmeal…so yummy.

By the way, I use the same recipe for waffles and it works great. Regular waffles, not the big Belgian ones.

My favorite is banana pancakes! I tried them for the first time in a humble little place in Key West and it is true love ever since. I am really more of a French Toast lover, but Banana Pancakes are equally yummy.

One morning I made the most awesome pancakes for a special treat: Banana Split Pancakes topped with pineapple syrup. Basically, you make banana pancakes but stir mini chocolate chips into the batter. Then top with the pineapple syrup (I found the recipe in a Paula Deen magazine) and a dollop of whipped cream.

It was freakin amazing, but so decadent that I’ll probably wait a year or so to make it again!

MissAusten That sounds absolutely amazing! I have to try it!

The mix I have used for years is Krusteaz. It has a buttermilk flavor that is the best! They are so easy to make and always come out perfect. You can make them thin or thick and they are delicious either way. I add a little vanilla sometimes. You could also make banana pancakes by adding some mashed banana to the recipe.
