pot roast. just add the veggies later than the meat, otherwise you'll have a bowl of mush.

Any cheap cut of meat prepared in the crockpot will be delicious after 6-8 hours. For great BBQ sandwiches, just do a roast and add some BBQ sauce, leave it on low for about 8 hours. It'll be all yummy & you'll be able to pull it apart for sandwiches. Or a good beef with some pepperocini and you can make italian beef sandwiches.
Beef stew is really good too. I love just the beef stew meat, a packet of onion soup mix, some beef broth, whatever veggies you like, cut up potatoes & a bay leaf. On low for 7-8 hours (depending on how tender you like it) and serve with some fresh bread - rye bread is especially amazing with beef stew.
