What are the benefits of having a creme brulee dish with an unglazed bottom?

Asked by mistic84 (274points) October 28th, 2010

I am remember hearing that creme brulee dishes should have unglazed bottoms. Is this true? I see a lot of dishes in different stores that are completely glazed.

Looking at a few ads, I found claims that they reduce slippage and heat more evenly. I doubt that the effect is huge. It might be more critical for something like a soufflé.

I always prefer my bottom to be unglazed, and try, as @crisw says, to avoid slippage.

@Aster: I was referring to the physical dishes that the creme brulee is cooked in. Sorry for the confusion.
