What is your favorite diabetic cookbook?

Asked by bobbinhood (5898points) November 29th, 2010

My sister was recently diagnosed with diabetes, and I would like to get her a cookbook or two for Christmas. I looked online, and there are hundreds of diabetic cookbooks. Rather than randomly choosing one, I thought to seek the experience of the collective. I would like to get her a book with a wide variety of recipes that:
-avoid difficult-to-find ingredients
-work on a budget
-taste incredible

So, do you have a favorite diabetic cookbook? If so, why is that one your favorite?
Is this an insensitive gift idea?

My favorite is Living Low-Carb by Fran McCoullough. It has a host of easy recipes all of which are diabetic-friendly.

Try the chocolate mousse. Yum!

Mostly I love ,because she is a foodie who had edited cookbooks for other chefs.

I don’t use a specific cookbook. I just go online. I have several food publications that were supplied by the American Diabetes Association and the free handouts I get from Kaiser.

One of my favorites is called ‘The Sugar Solution’, by Rodale books. It explains what happens to the body when someone is diabetic and has lots of advice and good recipes.

I didn’t realize that I never came back to respond to all of you! I’m sorry about that. I really do appreciate the resources you have shared. You were most helpful. :)
