What would happen if you took off the nitrogen fixing nodules on a plant's roots?

Would it grow them back or would it just die?

Looks to me like they’d grow back: http://en.wikipedia.org/wiki/Rhizobia#Symbiosis

The bacteria in the nodules also infect the roots, and trigger the growth of the nodules.
