big wheel gives more leverage via the steering linkage. If you watch the driver she moves the steering wheel very slightly while driving straight. When making a corner, even with power steering there is a lot of momentum that needs to change direction and the only way that is done is by friction of tires being held in a changed position. It also has something to do with ergonomics, semi tractor steering wheels are large also.
