Can you use honey as an activator for baking soda?

I just noticed that honey has a relatively high acidity.

If it can be used, what ratios would you use?

Yes, I’ve googled, but I haven’t found a satisfactory answer.

(I may buy some honey tomorrow and try it out for myself)
