Chocolate Marble Cream Cheese Pie (nice variation of cheesecake)

8oz. cream cheese, softened
½ cup granulated sugar
1 tsp. vanilla
2 egg yolks
1 tsp. unflavored gelatin
¼ cup water
1 cup whipping cream
4 oz. semisweet chocolate, melted
Cookie crust
Strawberries, pecans (optional)

Cookie crust: Combine 1½ cups chocolate cookie crumbs, 2 tbsp. granulated sugar, and 6 tbsp melted butter. Press mixture onto bottom and sides of 9 inch pie pan. Bake at 350 F for 8 minutes. Cool.

Preparation: Beat cream cheese, sugar and vanilla til smooth. Beat egg until blended. Combine gelatin and water in small saucepan over low heat. Stir until gelatin is dissolved. Cool slightly. Beat gelatin into batter.

Combine ¾ cup batter and melted chocolate.

Whip cream until soft peaks form. Fold one-half of whipped cream into chocolate batter and remaining half of vanilla batter. With large spoon, alternately place spoonfuls of chocolate and vanilla batter into crust until all batter is used. With small spatula or knife, swirl batter to form marble pattern. Chill for 3 hours. Garnish with strawberries and/or pecans.

When I pulled this recipe card out it was covered with stains. I use it often. :)
