Is it weird that I hate cake, but I like cupcakes?

babygalll's avatar

@Allie: I am like that too. I am not a big fan of cake, but show me cupcakes…I am all over them.

With cupcakes every bite has the perfect amount of frosting.

interesting…i’m the exact opposite-love cake, but will pass on cupcakes. they are too messy! however, i do bake them since they are easier to share at work. gingerbread cupcakes with lemon curd middles are a bit more work, but delicious. and people seem to really like s’more cupcakes.

babygalll's avatar

s’more cupcakes?? Sounds yummy. Do you have a recipe to share?

surlygirl's avatar

@baby: i do. i’m in the middle of some spring cleaning-type activity, but i will find it and try to post it here before the end of the week.

I recently found a little bakery in Seven dials in england that’s fruit and nut cupcakes with amazing neon colors of frosting. I don’t remember the name of the place, but i had an apple and cranberry muffin with bright red frosting and it was amazing!

so sorry! i got caught up in other things and completely forgot about this recipe!

SUMMER S’MORE CUPCAKES
2c graham cracker crumbs
2Tbl sugar
3/4c unsalter butter, melted
1c cut up milk chocolate candy bars (about 6 oz)
6 marshmallows

preheat oven to 325. line 6 extra large muffin tin cups with paper liners. spray inside of each liner with cooking spray.

in medium bowl: mix graham cracker crumbs and sugar. add butter. stir in chocolate.

fill each liner with about 1/2c of mixture to about 3/4” below the top of the liner. press firmly down, making a slight indentation in the center.

bake 10 min. place a marshmallow in the center of each cupcake. bake 10 min until the marshmallows soften and turn light golden. cool for 20 min in the pan on a rack. then lift cupcakes out of pan by the edge of the liners and cool completely on rack.

remove the paper liners and dust tops with powdered sugar.

will keep up to 3 days covered at room temp.

Birdlegleft is right, my sister fixed these red velvet ones with buttercream icing. I’m supposed to be watching out for what I eat, but that went out the window.

chocolate cupcakes with buttercream or peanut butter frosting.

I love only customized cupcake, and its very much in demand among kids. In cupcakes I like Red Velvet, Chocolate, and Butterscotch. Red Velvet cupcakes are rare but you can get it in “Deliciae Patissarie”.
