How does one cook Amaranth?

what are some good Amaranth recipes from people who normally cook with it.

I simply throw it into pots of soup that I make and let it simmer for whatever time the soup takes. It’s hard to damage and is a nutritious grain.

You can cook it following any set of directions and add it, cold, into salads.
