What can I make for my vegetarian nieces this Christmas.

I always try to make a special dish for my two nieces that don’t eat meat, plus something light for the family members that probably shouldn’t eat meat. Let’s just say I have some plus sized family members. Dinner is at my Mom’s and she’s a good traditional cook, but anything new or wild throws her and it doesn’t come out well. I like to try new things and they really appreciate the efort. Any ideas?

Vegetarian vegetable soup.
Veggie lasagna with spinach and mushrooms.
Vegetarian stuffed peppers (I think of rice as the main filler, but the veggies and cheeses you can use to stuff them can be changed up.)

I came here to suggest lasagna as well. Easy, crowd pleaser, sounds like it’s up your mom’s alley.

Stuff something. A pumpkin or other big squash. Fill it with Chinese sticky rice with dried fruits and nuts in it.

One thing I like to make for parties is portobello cap pizzas.

You can make them on a grill or under the broiler.

Just slap some good tomato sauce, fresh mozzarella, some diced veggies (I like onion and green pepper) on top, and grill or broil. You can slice them into quarters for a bite-size appetizer, if you prefer.

I bet you were wondering where I was, huh? Well let me tell you, this is the 4th time I’ve tried to post to this question. I’m having some Internet/Fluther problems over here. Don’t know if it’s the web or my connection or my computer or user error. Most likely the last one LOL. Anyway, here goes attempt number 5 (good thing I saved the answer in a Word document).

I’ll try to present some vegetarian and vegan ideas. I don’t recall if you said they were totally vegan or not.

My first thought was Vegetarian Vegetable Pot Pie not only because it’s fairly simple to make, but it looks normal to most people.

If you want to make some appetizers, I would go for Stuffed Mushrooms Recipe 1

Or Stuffed Mushrooms Recipe 2

Maybe you’d like to start with a soup. This is a yummy and filling Minestrone that won’t scare anyone. Minestrone generally doesn’t have meat in it anyway.

Or maybe this creamy Greek Garbanzo Bean Soup with Lemon and Olive Oil

For some entrees, how about Pumpkin Ravioli with Sage Butter Cream Sauce

Or Cauliflower Leek Kugel with Almond Herb Crust

Or Portobello Mushroom Stroganoff

Or this awesome, show-stopping Vegetable Stew Baked in a Pumpkin (This can be made vegan if you omit the butter and sub Earth Balance Buttery Spread which is totally vegan.

Or Butternut Squash Lasagna

Here’s one that’s a little bit more involved and unusual, but will still fit in with the “traditional” Christmas food items (although this one will scare the bee-jeezus out of the non-vegetarians bwah hah hah) Root Vegetable Enchiladas with Chipotle Cashew Cream

If you want a few side dishes, you could make some Parsnip Puree

Or Vegetarian Stuffing (can be made vegan with the omission of the eggs which are optional anyway or substituting a Vegan Egg Replacer

Or Rice Stuffing which would be nice stuffed into small squashes as individual servings.

Or Sweet Potatoes with Coconut Milk

Or Honey Chipotle Glazed Root Vegetables

Hopefully something on this list will tickle your fancy : )

It’s not low fat, but we just had a broccoli and cauliflower au gratin for supper and it was wonderful! I think you could have it as a main course although we had chicken with it. If you are interested I will scan and post the recipe for you.
