Three planting seasons for vegetable gardening in the Southeastern United States?

I live in the triangle area of North Carolina. We are moving to a new house with gardening space and missed the spring planting season. When can we plant next and what types of vegetables/spices etc. will be successful? Somewhere I thought I heard that there are three times in which to plant in this area--is this so?
