I put my name, home address, phone number, and email. If that bag is lost, I want to know about it. I’m not worried that the baggage handlers are going to track me down for any reason.

Name only. If it’s a missing bag, then I’ll be working with the airline (or whatever transportation / shipping company) and they’ll have all of the contact information and addresses that they need from me at that point.

On the other hand, if the bag is stolen, all they know is the name of the person whose bag they stole.

Name and Cell phone number.
The Cell phone number has never been associated with my name. It also is from a different state than I live in now.

What @glacial said. If someone really wants to negotiate some windey, rocky road in South Africa or Australia for nefarious reasons, or try to take my welfare fortune from me online, go ahead. Otherwise I will know my bag is lost right away.
