What's a good recipe using ginger and/or key limes?

A friend received a metric f*kton of fresh ginger and key limes. She gave me a shopping bag full to take home today. I’m planning on making a beverage syrup with some of the ginger, but apart from that I have no plans.

Any ideas?

Oh my goodness, I love the combo of ginger and lime!

The fist thing I thought of was ginger lime cheesecake, but so far I’ve only found ones that are using gingersnap cookies, rather than fresh ginger, but I’ll keep looking.

In the meantime, you can make plain old Lime Cheesecake

And then I thought about Asian food. Here’s a yummy sounding Ginger Lime Dipping Sauce. This would be good with eggrolls or fresh springrolls.

This sounds really refreshing for a springtime lunch. Quinoa Salad with Lime Ginger Dressing

This not only sounds yummy, it looks so pretty. Baby Carrots with Lime Ginger Butter

If you’re still getting snow or cold weather where you are, you might like this Thai-inspired Coconut Tofu Soup (you can also substitute chicken for the tofu if you like).

This doesn’t have any lime in it, but who can resist a beer laden Gingerbread Cake?

Or if you feel up to it, you could make your own fresh Ginger Ale

Back in the day, Broccoli Beef was my favorite thing to order at a Chinese restaurant. It’s pretty easy to make your own.

If you’ve ever been to a good Indian restaurant, you may have had the condiment Lime Pickle. It’s an acquired taste, but if you like it, you’ll love it. If you don’t like it, you’ll think it’s too spicy and too salty.

If you feel the urge, or have the knowledge of canning, you might enjoy this Pear Ginger Preserves recipe. I think @Jonsblond made something like this, she could probably give you some tips. I’ve never canned anything in my life. Canning is way beyond my comfort level.

We’re having Thai tonight but now all I want is Key Lime Cheesecake. haha

All sorts of cakes, cookies, and sweets. Key lime squares would be one of my favorites. I like lemon squares better than key like pie.

I use lime every other day, I don’t see why key limes couldn’t be substituted. I use it on tuna fish salad on a bed of lettuce. I use the lime in lieu of any sort of dressing.

Pork ribs with lots of salt and lime.

Pico de gallo—diced tomatoes, diced onions, diced jalapeños, lime and salt.

Lime on sautéed onions.

Lime and soy as a marinade for pork.

Lime, orange juice, basil, as a marinade for chicken breast. Cook on the grill if you have one.

Limeade.

Chicken piccata.

Chicken or fish francese/francaise.

I love ginger salad dressing, I don’t have a recipe for it. I’ve never tried to make it.

Ginger cookies and cakes. Yum.

Pickled ginger for sushi. No reason you can’t put it on all sorts of food. You could make sushi rice and veggies, you don’t have to roll it and do the whole process, nor do you need to use fish if you don’t want to.

@JLeslie I love Japanese ginger dressing. I’ve made it before and it turns out just as you expect it to taste. It also has carrots in it. Here’s a Recipe Oh yeah, and you mentioned onions. That reminded me that I make a super easy pickled red onion recipe that is fabulous as an accompaniment to Mexican food. Slice up a red onion, place it in a glass jar or corningware bowl with a lid, add enough lime juice to immerse the onions. Let it sit overnight. Enjoy.

Key Lime Pie with real key limes? I would kill for that.

Otherwise, you could use both some limes and the ginger in a marinade for chicken to be cooked over the grill. Just add some garlic and olive oil.

Ladies, ladies, no need to fight. I did happen to find a recipe for a Ginger Cheesecake that might satisfy all of us.

^ I could replace the lemon juice called for in the recipe with freshly-squeezed key lime juice, and maybe a little zest.
