Is there a generalized method for extracting pigments from organic matter?

Painters using traditional methods (and back in the day) tend to use a mortar and pestle to crush things in order to extract the pigment, in addition to adding other paint ingredients. Crushing things into tiny pieces which are then incorporated into the other matter, lending the color, is one method for doing this.

Grinding down.
And then acetone.

I think you can boil them as well?
