What shall I put in my fritatta?

I have eggs, Italian sausage, basil, cheese (cheddar, parmesan, mozzarella), zucchini, onion. Shall I add anything else? Spices?

I just got some smoked sea salt that’s great.

I would probably prefer some Italian seasoning to straight basil, but I’m guessing your basil is fresh?

Cholula Chipotle is beautiful stuff.

If I’m invited, leave out the sausage and add some oyster mushrooms! Mushroom, though, regardless, IMO.

A handfull of fresh or frozen corn kernels add nice color and texture, and is a bit unexpected. I always put some in my pasta salad now.

Yes, the basil is fresh. Great ideas on the mushrooms and bell peppers!

I am thinking of adding spinach, perhaps instead of the basil. Also chopped fresh tomatoes.

If you use spinach instead of basil, then I’d definitely add a little Italian seasoning.

And I still think you should try a little corn in part of it…I honestly think you’ll like it. It adds a texture a lot like peas, but not nearly so fragile.
