Will my green apples ripen ?

Right now they taste a bit starchy. Will time make them taste better?

Are they crisp or are they mushy? Starchy sounds to me like they are already ripe..

That may depend on what kind of apples they are. Some are green and crispy when they are ripe: Pippins, for example, and Granny Smith.

If the skin is green, I wouldn’t expect a lot in the way of ripening.

You can use them as-is if you like.
Peel, core and slice them, then slowly fry them in some butter. Add sweet when they start to soften…sugar, brown sugar, honey, sweetener, etc.
