A butcher gets to save the best parts of meat for him/her self. What are the best parts of meat?

Mainly beef but any meat will do.

Rounds/ rump roast.

for some, the testicles are the best.

Any of the meat is good if the cow came from a place that didn’t force feed the cow chemical, growth hormones, antibiotics, etc. You know, raised at home type farm cows, not commercially raised/processed beef. Any butcher knows that! My grandfather once told me “You don’t have any idea of how good beef can taste because all you eat is that crap that they sell in the stores.”

@kritiper Grandpa is correct, although it’s hard saying goodbye to your friends as they are taken to the butcher lol.

@KNOWITALL I always get sad when fair season comes and all of those pampered animals go to the slaughter or where ever they go…

Butchers don’t get to keep the best parts for themselves, because that is where they can make the most money.

The one part that butchers eat because it is tasty but not as popular is the filet “tail”, it is the end of the filet mignon that gets trimmed. The local meat counter sells it for about $5 a pound less than they charge for filet. No fat and just as tender.

A friend of mine was a butcher, and he brought some prime grade cuts. It was a revelation.
I will simply answer prime, rather than the choice or select we see at Safeway.
