What is your trick or cheat to make poached eggs without them exploding?

Asked by ragingloli (51967points) August 2nd, 2018

I tried the water vortex method, but that disintegrates the egg almost as much as boiling water.
So I make a cling film pouch instead. That way you can also put 2 eggs into one.

Just drop the egg into just barely boiling water.

Crack your egg into a bowl or onto a saucer. Bring a pan of water filled at least 5cm deep to a simmer. Tip the egg into the pan. Cook for 2 minutes then turn off the heat and leave the pan for 8–10 minutes. Lift the egg out with a slotted spoon and drain it on kitchen paper.

My cheat is to use a microwave in the poacher. Two drops of water in each and cook at medium heat for 1:30 minutes.

Knowing you, @ragingloli I thought you’d WANT them to explode as loudly and messily as possible.

Put some vinegar in the water in the pan you plan to poach the eggs in. Slip the eggs (san shells) into the water, cook until done.

I use a ladle to set the egg a little before releasing it. The film pouch sounds like a good idea.

The directions for swirling water, etc. I think are a prank on new cooks.

I think a ladle would probably do it. Sounds like the film pouch works for you.

I’ve seen these things. I’ve never used one so I can’t say how well it works for sure. Seems like it’d keep the egg together well, at least.

I was given this as a gift and it has a piece that’s supposed to be for poaching eggs, but I haven’t tried it. I think I’ll try it out tomorrow for breakfast!

Both of these are basically steaming the egg to cook it, from the sound of it. Is that still poaching the egg?

Apparently the trick is to use a fine mesh strainer.

Here is a video showing how to do it:

What is the difference between a poached egg and an over easy egg?

Call_Me_Jay's avatar

Poached is dropped in boiling water. Over easy is fried.

Sunny side up – fried leaving the yolk runny, not flipped over
Over easy – flip over the sunny side up and cook it a little, yolk and whites are runny
Over medium – whites are cooked through, yolk a little runny
Over hard – Cooked through, not runny
