Are we witnessing the demise of the "Peppier" from America's dining landscape?

When one dined at some of the nation’s finest (5-Star) restaurants, a visitor to your dinner table might be the PEPPIER (pronounced pep-pee-YAY), who would ask if you would like some freshly ground pepper on your salads (or other dishes), and when you responded in the affirmative, he (usually a male) would produce a long, wooden pepper grinder and would operate it over your food, until you indicated that you wished for the grinding to cease.

He would then disappear from your view, and you’d probably never see him again, for the duration of your repast.

I’ve not seen this person in many a meal. Have they all been fired, eaten by wild carnivores, sacrificed on altars, or what? Where have they gone? Can we get them back, please?
