What is a Ghost Kitchen?

I have them as choices from my Skip the Dishes account?

What are they?

They maybe a commissary kitchen, there is no restaurant. They do delivery only !

They also cook and make food for “lunch wagons”.

Pickup AND delivery. And usually consisting of a location that serves up the familiar fare of several different fast food franchise chains. The single outlet will cook up meals from say Wing Stop, Panda Express, Roundtable, etc. There’s a ghost kitchen about a mile from my house that features food from better than 20 popular chains replete with the condiments, packaging, brand logos and all peripherals identified with those brands. You would never guess the meal hadn’t been served up from the familiar stand alone drive up outlet.

Interestingly, most Chipotles near me are combination Ghost Kitchens and normal services.

There is one portion of the back area (kitchen) that is serving real-time, walk-in customers.
There is another section of the back area that appears to have its own grills, its own prep counters, and its own staff. All they do is order prep for pick-up, Doordash delivery and other non-staying customers.

There is even a chain called Local Kitchens You can order for delivery or pickup.

There is one in my town in Nothern California and when I googled for a link I noticed thre is one in Santa Fe NM and half a dozen in the San Francisco Bay Area.
