You can wrap them in foil, and cook them in a crockpot. It makes baked sweet potatoes.

Baked sweet potatoes are the bomb! Cook the hell out of them, slather with butter, and liberally sprinkle on the brown sugar/cinnamon.

Slice them about 1/4” thick, coat them with a little extra virgin olive oil and grill them.

Mash them up and put a layer of brown sugar an marshmallow on the top… that’s always my favorite dish at thanksgiving.

3 cups mashed sweet potatoes
1 cup sugar
1/2 teaspoon salt
3 eggs, beaten
3 Tablespoons butter
1/2 cup half and half
1/2 teaspoon nutmeg
1 teaspoon vanilla

Mix together and turn into greased casserole dish. Cover with topping and bake for 35 minutes at 350 degrees.

Topping:
Combine
1 cup brown sugar
1/3 cup flour
3 tablespoons butter
1 cup chopped pecans

Bake sweet potatoes until soft, let cool. Peel and cut in half length and width. In a large frying pan, put a stick of butter, let it melt a bit and then lay down the sweet potatoes, dousing in brown sugar. Get them a bit carmelized and flip, all the while dousing in more butter and brown sugar…This is one of the most delicious things I’ve tasted.

@AP: That’s more or less what we do for Thanksgiving! We also put raisins and pecans in it.

@nocountry: that sounds similar to what I do, except I don’t bake first. Slice into “fries” of whatever size you like, fry in lots of butter. When soft, add a little bit of brown sugar (to me, the potatoes are already sweet enough), and then throw in some cognac or rum and cook until there is a wonderful coating over every piece.

I like to use white sweet potatoes because they have a bit more heft to them and I like the flavor better. Also, since they seem to be not as common, they make me feel cool in some odd, purely daloonian kind of way. It is not often that I feel cool, so I’ll take what I can get.

@EP, I’ve never had it with raisins, but drained pineapple tidbits are pretty tasty, too. I think cutting back on the sugar would be in order if you add fruit.

Cut them into fries, pan-fry them until soft, bake until dry. Yummy sweet potato fries.

@AP I think my mom does pineapple sometimes. (We also use part-brown sugar for it.)

We wash and them slice them into 1/2 in round slices; place them on a cookie sheet; brush them with olive oil; and then sprinkle them with “old bay” or creole seasoning. Bake a 400 until done . Delicious and totally low fat. You can also serve with sour cream.

@daloon – cognac or rum?? YUM I am going to be the hit of Thanksgiving this year, lol.

And I only make it once a year, so I don’t care about all the fat and calories…it’s how my grandma made them and that’s the kind of nostalgia I can eat all day :D

Favorite Baked Sweet Potatoes:

Punch about 3 fork holes in top of potato
Brush them with olive oil
Sprinkle with Kosher Salt
Bake at 400 for about 40 minutes.

They are amazing
