Baking emergency! How to make a great cheesecake from scratch?

Asked by TheNakedHippie (470points) November 18th, 2008

The recipe I’m using calls for a 12-inch springform pan, which I do not have and do not care to spend the money on. Is there another option that will prevent my cake from cracking? Please help!

What other kind of baking pan do you have? It’s going to be more important to watch the temp and possibly a water bath.

The cake will almost certainly crack, even in a springform pan.

And you’re going to have a really hard time with the presentation if you don’t use a springform pan.

The springform pan is designed to make it easy to remove the cheesecake from the pan. You can bake it in basically anything as long as you are willing to leave it in the pan. The most important thing you can do (besides a water bath) to prevent cracking, is to not over beat the mixture after adding the eggs. No matter what a recipe says, I always mix everything but the eggs, mix well, then add the eggs and just mix to blend. You may have noticed that a lot of recipes have a layer of topping of some sort. There is a reason for that, cheesecakes crack. Beg, borrow or steal a springform or you will hate yourself. Good luck!

I don’t know about saving the day, but I have baked my share of cheesecakes. I gotta lurve you for that one Judi.

Sad thing is I started to answer, “where is SoapChef when you need her,” then I couldn’t figure out how to spell Chef. Sad, I can’t spell or cook!

I don’t know if I want a naked hippie baking anything. It’s seems unsanitary.

@asmonet I have heard those hippies don’t bathe.

Thanks everyone! A few things:

- If I don’t mind leaving it in the pan, will a regular 12-inch round pan work fine as well?
– And I am a very sanitary, very clothed hippie when necessary ;]

Hey NakedHippie! Will the recipe be successful done in a regular pan? Yes. Will you enjoy trying to cut and serve it? No.
I supected you were one of those “clean cut” hippies.:0)
