What would be a refreshing and new concept for a food place? (hot zone: beach/ port)

I’m interested in setting up a food place in Veracruz, México and I’m looking for new ideas (rolled sandwiches or so)

make a mellon/fruit shack. serve fruit salad inside the mellon so its like the bowl. you can make smoothies and health drinks too. at night turn it into a fruit bar where you serve fruity drinks and vodka watermellon (poke holes in watermellon, pour vodka into holes, let sit in fridge for 2–4 hours and then eat and enjoy). outside, you can have lanterns made out of mellons and make twisty streamers out of peels. you just have to set a bunch of animal traps. you can also compost everything in the store.

Know what I would love? A restaurant on the beach. I come in and am given a touch screen PDA with your menu on it in exchange for my credit card which you hold on to. I go and find a nice place on the beach to relax, and none of your servers bug me. When I want a drink I press it into the PDA and a few minutes later your server comes and delivers it! I can give them a tip right then. At the end of my stay, I exchange the PDA for the bill, review and sign it, and am off on my merry way.

@Mtl_zack: that sounds great! i’m thinking also of making some kind of food that can be worth the try for locals and offices nearby. Tourist clients might be really interested in the fruit shack but still people living there everyday might not like it as an everyday food place. Still those lanterns and vodka drinks are definetely in!

@dynamicduo: dude that’s a wonderful idea, it’s like that vibrating things costumers take to their tables to let them know when their food is ready but the other way around! It’s pretty non intrusive and a way to keep everything IN the system instead of having servers typing in orders in a machine… wow! thanks!

I’m hoping someone opens a restaurant called “I Don’t Care”. Then, when I ask my wife what she wants for dinner and she says “I don’t care”, I’ll know exactly where to go! We would eat there like 3 times a week.
