What type of beef do you use in teriyaki?

I have always used flank steak, do you use something different?

Sometimes I’ll use a round or a sirloin. Depends what’s on sale.

I know some people even use beef tips. I say whatever is on sale.

@AstroChuck Do you by chance have a good recipe for that with the tofu? I have to cook for a vegetarian and seem to run out of good things to make since I am not one myself.

Tofu is easy. It’s all about marinating. You just use a press to get out as much water as possible. Then the tofu is like a sponge and will take on the flavor of whatever you soak it in. After that you can bake it, fry it, grill it, whatever.
Easy.

Use whatever cut of beef you like. The secret is to cut it thin and pound it thinner before you marinate it and thread it on the skewers.

In Japan it is normally a flank type steak – marinate overnight and grill – cut against the grain.

And use real ginger, garlic, and green onion in the marinade.
