Mash up what you have left with some salsa and enjoy your guacamole with chips or crackers. Avocado is also great in omelets. Bacon always works very well with avocado be it in omelets, sandwiches, salads, etc.. One of my favorite sandwiches is tuna, avocado, and bacon on sourdough bread. Mmmmmmmmmmmmm…wtf (my initials)

Here is one more: put some mayo on a rice cake…add avocado slices…on top of that, layer alfalfa sprouts…salt and pepper, and you are in business, quick and simple…wtf

I usually can’t make it far enough to put the avocado on anything. Once I cut it open, in goes my spoon. By the time I realize what happened, there’s no more ‘cado… :-(

Last night, I had a whole wheat pita stuffed with Cajun turkey, zucchini, diced tomato, mustard, and added some avocado & S n’ P to it. So good…

My tuna melt recipe. Spread tuna salad on two pieces of bread. Cover with thinly sliced avocado, and then cheese. Put under the broiler until the cheese melts.

I totally agree with wtf about avocado and eggs, a match made in heaven. Two of my favorites:

a BTAC omelet (bacon, avocado, tomato, cheese. A dollop of sour cream on top is wonderful with this.

I also like to dice avocado, scramble it with eggs, and then just as the eggs are set fold in cubes of cream cheese.

Avocados are beyond amazing.

I would say avocados are good with any kind of sandwich. Also, you might want to try making an avocado smoothie.

Ooh, there is a sandwich shop nearby that does a pastrami sandwich with avocado. Mmmm…

On another note, I’ve always been fascinated with using avocado as a mock-sweet food. Alton Brown did a show where he made frosting with avocado, and there are tons of recipes for mock-chocolate pudding using avocado. I think it sounds really good, has anyone tried that kind of a thing?
