Unusual recipes for butternut squash?

I always make the same thing with butternut squash – either a pureed soup, or chunks of roasted squash with olive oil, salt, and maple syrup. I just got two small butternut squashes from my CSA and I’m looking for a new recipe idea. I’m vegetarian, so looking for ideas that don’t involve meat. Thanks!
