Roasted Carrots and Parsnips - What herbs do you use for Christmas Dinner?

I’m cooking for 8 this year and want to put something different on my roasted vegtables, what herbs do you suggest?

Here is a recipe that sounds delicious. it uses honey and balsamic vinegar.

I use rosemary, thyme and black pepper. I use it as a rub for the prime rib and I sprinkle a little of it on the vegetables.

For root veggies, I’d stick with earthy complements like sage and thyme. Keep it simple.

For root veggies, we caramelize them in a pan, then add them to potatoes and mash! The mashed potatoes are incredibly delicious this way, a tad sweeter and something else, and we get extra root veg in our diet. Win-win!

I’m a vote for rosemary and thyme too. Or you could try parsley and sage, if you’re into Simon and Garfunkel.

Rosemary and garlic, s&p. I’m pretty sure this seasoning combo goes well on everything.

I have discovered mint and it adds very nice variety to my meals.
