Can I leave the egg out of this bread recipe?

This recipe calls for egg in a yeast bread. I don’t want to make a non-vegan loaf, so can’t I leave out the egg and let the banana and yeast be the binder?
Thoughts?
Banana Almond Bread
⅔ cup warm water (110 degrees F.)
2 tablespoons vegetable or olive oil
3 tablespoons sugar
1¼ teaspoons salt
1 egg, slightly beaten
2 medium-sized ripe bananas, mashed with a fork*
½ cup sliced or chopped almonds
Grated zest of 1 lemon
3½ to 4 cups bread flour
3 teaspoons instant active dry yeast
