How often do you cook something you have never cooked before?

My wife is out of town for a week, so tonight I found a recipe for Huevos Rancheros, and made dinner for my son and me. I have 5 courses I can make to impress people, and maybe another 5 or 6 quick dinners, but I almost never pull out a recipe and make something I have never tried to make before.
When was the last time you did this? Any disaster stories? Any huge successes?
