Will one less egg ruin my pancakes?

Doubling my batch of pancake mix would require four eggs and I only have three. Will that ruin the mix? Is there anything I can add to offset the missing egg?

Eggs help things stick together. Skimping on them may make the batter more likely to fall apart. Don’t know of anything that can substitute egg. I’d scale the recipe to work for 3 eggs, or if I were feeling lazy I’d just go with the three eggs and cross my fingers it doesn’t turn into a pile of crumbs. Sometimes if you have really fresh eggs you can get away with less.

Reduce the recipe to cater for 3 eggs, and just make smaller pancakes for everyone. I wouldn’t recommend using 3 eggs for a 4 egg recipe.

Tbh I don’t recommend ever deviating from baking recipes unless if you want to do something with the sugar (ie replace it for fruit sugar, or just reduce the amount), or chocolate in a chocolate cake.

No, it will not ruin the pancakes. It will simply give them a different texture.

For people who love to bake, I recommend a little trick I learned in home economics. Try varying the ingredients in several small batches and see what happens. That way you will learn what works and what doesn’t

I say go ahead and try it. The finished product may not be quite as flexible.

Yu should be fine. You might have to add a little more water. Just play it by ear.

How big are the eggs. If they are extra large eggs it should not make a difference. Most recipes use medium eggs as a standard. 3 extra large eggs should have enough volume to compensate.

You may have to make smaller than normal pancakes to make them easier to flip, but it should not ruin them.

Do you have any mayo? You can substitute 3 tbsp of mayo for the missing egg. I’ve never tried it for pancakes, but in baking (quick breads) I’ve done this and couldn’t tell a difference. I think especially with the other three eggs in there, the pancakes would be fine.

I decided to go with one and half times and add a little milk to make the batter go farther. They turned out pretty well. Thanks for all the great information!

i think your pancakes will be fine with one less egg, just add an extra dash of pancake mix, a tablespoon of milk, and teaspoon of vegetable oil. It’s pancakes, not a Picasso… Unless you are participating in Hell’s Kitchen with Gordon… :)
