How do YOU make alfredo?

What’s your recipe for making a wicked alfredo sauce? Do you like it with chicken? Bacon? Shrimp?

I like putting mine on fettuccine and adding bacon and asparagus.

i like mine with monterey jack cheese and a lot of garlic, over fettucine with broccoli, and shrimp preferrably if its cheap enough but chicken will do otherwise. actually a meat isn’t entirely necessary. a good alfredo sauce with brocolli and noodles is the bomb.

I like it best on shrimp.

With dove breasts, morrel mushrooms and brocolli on noodles. I may add some prosciutto if I have some leftover.

@WestRiverrat I don’t know that I’ve ever had dove. I should put that on my “to taste” list.
Where do you get the mushrooms?

@papayalily they grow wild in this area. I go out and pick them…if someone else doesn’t get to them first. I also have a couple patches of wild onions and wild asparagus that I occasionally visit.

Alfredo has to make me first.

I had to google “Alfredo”. We just call it “white sauce” over here. And I agree with @deni my favourite is with cheese and garlic, poured over pasta & broccoli – that’s a very typical meal I’d cook for myself if I was cooking for just myself. Alternatively I’ll add chopped cooked bacon and mushrooms.

Take Butter (1 stick) Melt and sautee two cloves garlic till nicely taosted (chopped garlic) Then add a Qt of cream and 2 egg yolks, make sure to blend in the egg before cream gets too hot or you will have scrambled eggs, then add LIBERAL amount of cheese to thickeni prefer parmesan but any cheese will do. Also use some of the pasta water to thicken sauce. of course taste as you go so you come to your own measurements but thats it.
