What is in zaatar?

here is a recipe that I use

* 1/4 cup sumac * 2 tablespoons thyme * 1 tablespoon roasted sesame seeds * 2 tablespoons marjoram * 2 tablespoons oregano * 1 teaspoon coarse salt

By the way, there's a restaurant in Berkeley named Zaatar after the spice, where you can get a delicious pile of it, plus all the main dishes that go with it. Yum!

Most middleastern grocery stores will sell Za´atar in huge pound bags in case you don't feel like making it yourself. And it keeps its flavor longer if you store it in the fridge.
