What should we do in South Africa?

We are mainly going to the beaches for shelling, but I since we will be there for two or three weeks, what would you recommend as a must see since this is a once in a lifetime trip? We won’t be doing any surfing, shark cages, or things like that, but Kruger National Park, Table Mountain, and Jeffreys Bay are on the agenda. Any advice?
