What's the most creative thing you've ever cooked late at night?

There’s something about late-night food that is different from everyday food. Suddenly it becomes ok to put bacon, eggs, and avocados on a hot dog or to make a grilled cheese sandwich with more than 10 ingredients. There are some ancient fries in my freezer, hamburger meat, jalapenos, cheddar, and sriracha sauce, and I’m thinking of turning it all into chili cheese fries. How do you satisfy your late-night munchies?
