How does a restaurant pick the vegetable of the day?

Today went for lunch at my favorite rib joint and as usual got a salad and vegetable of the day to balance out the bad (but oh so good) of the ribs. What was the vegetable surprise set before me? BRUSSEL SPROUTS! What would possess a chef to inflict that on the ribgoing public?!
